Biscoff ice cream Recipe (Cookies and cream)

Biscoff ice cream; my special cookies a d cream ice cream recipe is super yum and worth every calorie! Biscoff is one of my favorite spice cookies to enjoy during the holidays I really cant decide which to pick when walkers shortbread comes in. This recipe is similar to my Oreo cookies and cream ice cream which everyone loves! I know that for sure in my home. The only difference is the cookie swap!

Today is all about ' Europe's favorite cookie with coffee'. The lovely in-flight cookies given to passengers. You should know by now that I am talking about BISCOFF COOKIES...

Seriously, like most European cookies, this cookie is just so good. I love it though I find it a bit too sweet really. So I try not to indulge too much oh.

I already have a no churn cookies and cream Ice cream on the blog but I had to make this version as a standalone  because cookies and cream with biscoff cookies is the last busstop when it comes to a cookies n cream dessert.

I am so excited about no churn Ice cream because it's so easy to make, no need for an ice cream machine  ( all you need is a hand mixer or a stand mixer) and it is soooo delicious and creamy.

Better than store bought if you ask me. Plus you pride yourself in your various creations and honestly you can create any variation that comes to your mind. All you need is your imagination.

Let's get started.

             Recipe

Prep Time: 5 mins.     Yield: serves 10

Freeze Time: 6 hrs

Ingredients:

  • 30 sticks of Biscoff Cookies ( coarsely crushed)  set aside ¼ cup for garnishing
  • 2 cups cold heavy whipping cream
  • 1 tablespoon vanilla extract
  • 14 oz sweetened condensed milk
  •  ⅛ teaspoon salt

Directions:

    •  In a cold mixing bowl pour in the sweetened condensed milk, cold heavy cream, salt and vanilla extract.
    • Whisk for 4 minutes start with medium speed for a minute, then whip on high for the remaining 3 minutes.
    • Be careful not to over whip because if you do you will be making butter.
    • Gradually fold in your the crushed cookies
    • Transfer ice cream into a 2 Quart container and freeze for 6 to 8 hrs or overnight.
    • Serve with sprinkles of crushed cookies.
