Does Nigerian coconut Pasta really exist? Or did I make it up? ? Well this is an amazing pasta variation of our good old Nigerian coconut fried rice with tomatoes. It's delicious and the perfect weeknight dinner.

1habanero pepper finelychopped
1/2small green bell pepperchopped
3stalks of spring onionschopped
Heat up coconut oil, then sauté onions till translucent.
Add the tomato paste and pepper and stir allow to cook for about 2 mins then add the coconut milk.
Stir and add the spices
Allow sauce to simmer till it reduces to a semi thick paste.
Turn off heat and stir in chopped green bell pepper and/or spring onion. Let the residual hear soften them
Bring 4 quarts of water to a boil
Add salt then pour in the Rotini pasta
Allow pasta cook for 8 minutes for that al dente perfection.
Transfer pasta back to pot. Mix in the sauce until well combined.
