Instructions
Preheat oven to 375°F.
Fill an oven safe bowl watering put it at the bottom of the oven as you would when you bake a cheese cakes. This helps to create moisture in the oven and prevents the moi moi from drying put. Remember moi moi is usually steamed.
Prepare 10/ 11 inch round baking dish or pan by spraying with non stick spray or simply greasing and set aside.
Rinse the soaked beans and transfer to the blender. Add onions, 2 red bell peppers, habanero pepper, cooking oil, raw egg and 1 cup of water. Blend till smooth. if you find that your blender is struggling to blend , add the remaining ½ cup of water.
Transfer to a bowl and whisk for about about 2 minutes with your hand mixer. or for 3 minutes with your hand whisk.
Break up the corn beef and fold into the batter, then transfer into prepared baking dish, Top with pepperoni, chopped green and red bell peppers.
Put the moin moin in the middle rack of the oven and bake for 55 to 60 mins. The moin moin is done when its firm. Note that hot moin moin is soft but gets firmer as it cools.
