Basmati Rice

Chicken stock
thoroughly washed and drained

Hatfield uncured ham
cut up into 1 inch cubes
1½

frozen mixed veggies
thawed

cooking oil

small onions

medium red bell pepper
chopped

medium green bell pepper
chopped

medium yellow bell pepper
chopped

medium orange bell pepper
chopped

ginger powder

ground garlic

bouillon cubes

bay leaf

Instructions
Bring chicken stock to a boil. To the boiling chicken stock, add ginger powder, garlic and 1 bouillon cube, then add in the rice. stir and cover pot.
Allow to cook till all liquid is absorbed. this takes about 20 mins. leave pot covered.
While the rice is cooking, heat up oil in a another pot and sauté the onions.
Add the chopped ham and stir fry for about a minute, then add the thawed mixed veggies and 2 bouillon cubes.
Stir fry for another 5 minutes, taste for seasoning and adjust accordingly.
Add the multi colored bell peppers stir and turn off heat.
Pour the ham stirfry into the cooked rice, mix gently till well combined.
Serve warm
