I love Shortbread Cookies. I love them in all forms. As Shortbread Fingers, Shortbread Rounds, Shortbread Thumbprints, Shortbread Wedges you name it lol. My 3 year old calls these shortbread wedges cookie pizza ?

We are all obsessed with the walkers Shortbread cookie tin filled with a variety of shortbread cookies which is sold in Costco wholesale stores just before thanksgiving up until after Christmas. It usually goes out of stock before Christmas because it’s so good. It’s $19.99 but yet finishes so fast. We were walkers cookies addicts until when I decided to start making my own version of these cookies because they common they are easy to make and you can whip them up whenever you want. Which includes anytime of the year.

These skillet shortbread wedges are inspired by one of the Cookies in that amazing walkers shortbread cookie tin. If you don’t have a skillet, you can use a 9 or 10 in cake pan or a pie dish.
What are Shortbread Cookies
Shortbread Cookies are easy egg free cookies. They are made with just major 3 ingredients; butter, sugar and flour with an optional dash of vanilla extract.

How to make Skillet Shortbread Cookies
Mix your dough. Then line your 10 in skillet or cake tin with parchment paper.
Press the dough into the skillet until it is evenly spread.
Smoothen Top by placing another parchment paper over the dough and smoothening with the heel of your hands
Bake and enjoy.

SKILLET SHORTBREAD WEDGES
Shortbread wedges are one of the ways my family enjoys our favorite Christmas cookie; shortbread cookies yay!!! This Skillet Shortbread cookie will not only delight your eyes but also your tastebuds.
- 3/4 cup Butter ( 12 Tbsp/ a stick and half)
- 1/2 cup of sugar
- 1-3/4 cup all purpose flour
- 1/2 tsp Vanilla extract (optional)
Directions:
- Preheat oven to 400
- Mix butter and sugar till slightly fluffy. Either by hand or with a hand or stand mixer
- Add the vanilla extract then add the flour.
- Mix till it comes together and forms a ball of dough.
- Line your skillet with parchment paper
- Transfer dough to skillet. Press dough down till evenly spread in the skillet.
- To make it smoother, spread another parchment paper over the dough and smoothen.
- Bake for 20 mins in oven.
- Bring the skillet out of the oven be careful it’s hot. Make sure to use a little mitt or a skillet holder.
- With a bench scraper, Cut cookies into 8 or 16 wedges ( triangles)
- Then with fork poke holes on the surface of the cookies.
- Put back in the oven then turn off the heat. Let the residual heat from the oven finish the baking.
- Let cool then enjoy ?
Shortbread is a delicious part of Christmas tradition. And homemade is always the best, such a good bake and lovely to have for guests over the festive period.

Oh what a great unique way to have shortbread! There’s something about a wedge that makes me stop at one… whereas cookies, oooh shortbread cookies I can (and will!) eat many!
