These are the cutest St Patrick's Day Cookies. Green, delicious, airy and filled with the perfect white pebbles aka white chocolate chips.

You might have guessed I would be making something like this for St Patrick's Day going by my Red Velvet Chocolate Chip Cookies and my Strawberry Chocolate Chip cookies. You all loved those cookies especially the Strawberry Chocolate Cookies. Those cookies have fast become one of the most popular recipes on the blog and that's exactly why I decided to share these St Patrick's Day Cookies with you all.

What is St Patrick's Day?

St Patrick's Day is an Irish National holiday which commemorates the arrival of Christianity in Ireland. Ireland is a Catholic Country and St Patrick is their Patron saint. St Patrick's Day is celebrated every year on the 17th of March not only in Ireland but also in the United states. I was curious as to the relationship of the color GREEN to St Patrick's Day and I found this interesting article.

Why You Should make these St Patrick's Day Cookies.

During the school year there are usually a lot of mini class parties for the kids celebrating various occasions. Like Christmas, Valentine's Day, etc. St Patrick's day is one of those occasions for which they may have a mini class party. And a mini class party calls for a collection of treats donated by parents.

The Children are asked to wear the color theme of the party which in this case would be Green. This would definitely be a nice time to go pick up something nice and green from Children's Place (you get free-shipping with no minimum order plus a $10 off your first purchase Terms & Conditions apply) or Carters those are my favorite places to shop for my kiddos.

What is the difference between these St Patrick's day cookies and the other Chocolate Chip cookies on the blog?

The color GREEN ?. Besides green, there are a few differences in the method. These St Patrick's Day Cookies are a bit more airy and 'cakey' than the other chocolate chip cookies on the blog. And why is this so?

In this recipe I didn't use melted butter instead I creamed the butter and sugar as I would for a cake until it was light and fluffy. Baking chocolate chip cookies with melted butter makes it dense and chewy which I totally love. Psst I love the texture of these ones too. The good thing is I can choose to make chocolate chip cookies However and whenever ????.

How to make these St Patrick's Day Cookies

It's actually easier than you think. With a few ingredients your St Paddy's cookies will come alive.

Simply cream butter, sugar and green ( lime or green apple flavored ) gelatin till light and fluffy. A few drops of green food color will bump the shade of green up a bit. Feel free to leave that out if you want a pair shade of green.

Add in the eggs and flour then the white chocolate chips bla bla bla....

  • Lime or green apple flavored gelatin
  • Vanilla Extract
  • Milk Chocolate Chips or Semi sweet Chocolate Chips
  • Green Food Color
  • All Purpose Flour
  • Granulated Sugar

St Patrick's Day Cookies!

Ingredients
  

  • ¾ cup butter
  • 1 3 oz lime or apple flavored gelatin
  • ¾ cup white granulated sugar
  • 2 eggs beaten
  • 1 teaspoon pure vanilla extract
  • 2 drops green food color
  • 2-½ cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon of salt
  • 1 cup white chocolate chips divided

Instructions
 

  • Mix flour, salt and baking soda in a bowl and set aside.
  • Whisk butter, gelatin and white sugar together
  • Add 2 drops of green food color, the vanilla flavor, the eggs, then whisk till well combined.
  • Mix in the dry ingredients till well combined ( do not over mix ).
  • Fold in ¾ cup of the white chocolate chips.
  • Mold the dough into one ball and refrigerate for up to 2 hours or overnight
  • After 2 hours Preheat oven to 350 degrees F
  • Bring out refrigerated dough scoop by a heaping tablespoon full. Place 3 inches apart on a cookie sheet lined with either parchment paper or a silicon mat.
  • Press down Cookie dough lightly, stick on reserved chocolate chips on the top of the cookie.
  • Bake for 15 mins.
  • Bring out from oven, stick in some more white chocolate chips while cookies are still hot.
  • Allow cookies cool on cookie sheet for about 8 mins then transfer to the cooking rack and let it cool completely.

    Need something to add more flavor. Added about five or six times the amount of food coloring. Maybe fresh lime juice would help.

      Hi Mvws,

      Thanks for your feedback. A few things to note about this recipe, the lime gelatin is not added just for flavor but for color and to reduce the need for lots of food coloring.

      We find the amount of lime flavor from the gelatin works for us. Feel free to add more lime flavor if you want a more intense lime flavor.

      The amount of color needed will depend on the type food color being used. Paste food colors tend to work better. Hope this helps. Thanks for stopping by.

    Made these. Don't leave in too long otherwise they turn brown. Also, add more food coloring for a vibrant look. Ours turned out pale green with brown edges... but tasted pretty good. Fluffier than normal cookies.

      Thanks for trying out the cookies and taking time out to leave your feedback, I appreciate that! Depending on the food color used, you may need to add more or less. I used the paste food colors which are more concentrated than the liquid. Is that what you used? Also the green gelatin (apple or lint )also adds some color. Happy you found what worked for you.     Btw - in your ingredient list you wrote pink food colouring instead of green, I thought you might want to fix that 🙂
