This Vegan Jollof Rice will definitely blow your mind. You won't believe it's not the original. Guess what? It's one of the easiest and most delicious Jollof recipe.

Ingredients

  • 2 ½ cups Parboiled long grain rice  washed thoroughly and drained completely
  • 2 Tbsp Tomato paste diluted with 1/4 cup of water
  • 1 Large onion chopped
  • 3 sprigs of spring onions chopped
  • 4 cups of vegetable stock
  • ½ cup cooking oil of choice
  • salt/ vegetable bouillon to taste
  • 1 teaspoon curry powder
  • teaspoon dry thyme
  • 1 teaspoon rosemary
  • 3 cloves of garlic crushed
  • ½ teaspoon ground ginger

Instructions

  • Preheat oven to 350ºF /180ºC
  • Heat up oil in a 10/12 in cast iron skillet, sauté onions and garlic till onions is translucent.
  • Stir in the diluted tomato paste add the bouillon powder or cubes, curry, thyme, rosemary and ground gingerthen stir fry for 2 minutes.
  • Add the rice and stir fry for another 2 minutes to get the flavors in.
  • Pour the vegetable stock into the skillet. Stir, taste for seasoning and adjust accordingly. It should taste slightly salty. Don't worry the rice will absorb the salt when cooked and the flavors will balance out.
  • Cover tightly with aluminum foil.
  • Transfer to the lower rack of oven and bake for 45 mins or until all the liquid is absorbed.
  • Allow to stand in oven for another 5 mins, then bring out, sprinkle the chopped spring onions then use a fork and fluff the rice.

  1. ok it’s kinda funny to read “honestly I wouldn’t have ever thought of ‘Veganizing‘ Jollof Rice if my brother hadn’t mentioned to me” cause like… it’s a rice dish? just get rid of the meat stuff and it’s already vegan? but then i realized ohh right, different cultures i guess

This is ace. I am not vegan but was curious as to how Jollof Rice would taste without meat or meat stock. I was pleasantly surprised. I followed your exact recipe but made it on the stove top instead. I just found your blog and I am happy to explore. Thank you.

Hmm… never seen baked jollof before. I will give it a try one day. Have you every tried make it in a slow cooker?

    1. Hi Dunori,
Honestly you need to try making Jollof rice in the oven, you will never want to make it on the stove top again. It always comes out perfect with no burns plus you get to go about your business without having to watch your pot like a hawk. Hope you get to try it soon. It’s so easy.

About the slow cooker I haven’t tried that yet but it’s on my to do list. Hopefully I can perfect a slow cooker Jollof recipe that won’t be soggy.

Thanks for stopping by and taking out time to drop me a comment. ?
