I love fruity ice cream and yoghurt. By fruity I don’t mean just the flavor, I love some melty chunks of fruity fun in my deserts. Hubby differs in this, he totally loves any thing smooth except of course in soups and stews. He believes deserts should be smooth without ‘ blockades and traffic’ most times I make smooth fruity no churn ice cream but I still try to enjoy my chunky fruity ice cream once in a while and this smashed blueberry ice cream is definitely a keeper.

The secret to this intense blueberry flavor is the fact that the blueberries were roasted not steamed like I did with my strawberry ice cream recipe. You all know how I love to use my oven Remember my Roasted bell peppers stew and oven cooked fried rice. Since roasting my blueberries turned great, that’s my new go to method to make my fruity ice creams trying. Super yum!! Be sure to seal the loaf pan with plastic wrap ( see pic 9 above ) to prevent condensation and bits of ice from forming.

Smashed blueberry ice cream {no churn}

Ingredients

  • 2 cups Cold heavy cream
  • 1 14 oz can condensed milk
  • 1 lb blueberries
  • 1 Tbsp of sweetener optional

Instructions

  • Chill the mixing bowl and beater

Prepare the blueberries

  • Preheat oven to 375ºF
  • Wash blueberries, then drain on a paper towel lined colander
  • Line cookie sheet with parchment paper.
  • Mix blueberries with sweetener and spread on lined cookie sheet.
  • Roast in the oven for 30 mins.
  • Turn off oven and allow to cool for about 5 mins
  • Blend to a paste with your hand blender for a smooth ice cream or mash with a fork if you want some bits of blueberries like I did in this recipe.
  • Mix blueberry paste with condensed milk and set aside.

Ice cream base

  • Pour cold heavy cream into the chilled bowl
  • Whip heavy cream till soft peaks form
  • Gently fold in the blueberry-condensed milk mix into the whipped cream till well combined.
  • Transfer into an ice cream bowl or a loaf pan and cover with lid. if using a loaf pan, cover with plastic wrap
  • Freeze for 4-6 hrs
  • Enjoy
