This bacon pancakes recipe was slightly inspired by McDonald's Bacon Egg and Cheese McGriddle which is bacon, egg and cheese sandwiched between two syrup soaked pancakes. You can easily make a McDonald's McGriddle copy cat recipe by sandwiching with eggs and cheese in between them.
These simple pancakes infused with bacon is a winner in my home anytime, any day for the kiddos and adults alike. But just one person doesn't go ga ga over these breakfast deliciousness though ? He prefers his pancakes plain or just with blueberries because those are his favorite fruits and isn't crazy about bacon yes some people ain't crazy about bacon.... my son ?

Drenching these pancakes with maple syrup is a sin which we are totally guilty of ? ? But this is one sin I don't regret ha ha but we have learned to tread with caution Try these and you will see what I am talking about. The mix of bacon pancakes and maple syrup..... tbh decadence can't even begin to describe this combo.
In the spirit of low-carbing and weight management I have swapped these pancakes with my low carb version and I use sugar free maple flavored syrup. Not as decadent as these but hey! It serves its purpose ?
These days we all use the sugar free maple flavored syrup because the quantity of syrup used on pancakes is best imagined so I think using sugar free will at least help reduce the amount of sugar consumed with the regular pancake syrup ?
How to make Bacon Pancakes.
Bacon pancakes are super easy to make and super tasty too.? All you need is a trusted pancake recipe and a hand full of bacon crumbles plus more for sprinkling on top.
Do you have to use bacon crumbles? No you don't. You can fry up some bacon and cut it up as a substitute. But I always prefer the bacon crumbles I buy from Costco because of the convenience. Besides I always have it handy for salads and my kiddos love munching on it so why not. ??♀️

- 1 cup all purpose flour
- 1 cup milk
- 1 egg
- 1 teaspoon baking powder
- 1 tablespoon sugar
- 2 tablespoon salted butter melted
- 2 or 3 tablespoon bacon crumbles Plus more for topping
- Mix all dry ingredients together and set aside.
- Mix all the wet ingredients and set aside
- Pour wet ingredients into dry ingredients and mix with a fork or a whisk
- Mix till well combined ( it doesn't have to be completely smooth)
- Add the bacon crumbles into the pancake batter and mix in
- Heat up a nonstick fry pan. Grease frypan with baking spray.
- Scoop a quarter cup each into the fry pan.
- Fry for about 1-2 mins and flip
- Serve maple syrup and more bacon
- Enjoy ?
