Beef stir fry and vegetables.
Beef stir fry and vegetables are one of my family’s favorite dinner recipes. This is a more veggie loaded twist to our favorite broccoli beef stir fry recipe.

How to cook beef stir fry with vegetables.
- Get all Your veggies chopped and ready. The carrots and bell peppers are chopped julienne style. (Feel free to chop it the way you prefer.) I blanched* the broccoli florets to keep it green.
- Stir fry the beef then add the vegetables ( one veggie at a time ) make sure to watch the video to see how I do it.
- I like my beef stir fry with vegetables on the crunchy side so I put them at varied intervals into the stir fry starting with the carrots which is the firmest vegetable in the mix.
How to blanch vegetables. Blanching vegetables takes s few easy steps
- Prepare an ice bath.
- Bring water to a rolling boil.
- Add vegetables to boiling water and cook for 2-5 mins
- Scoop out vegetables from boiling water straight into ice bath to stop the cooking process.
- There are two ways I like to add my McCormick® One seasoning mix. You can either add it in while stir frying the meat or add it to the soy sauce mix. Either way works just fine.
Calories in Beef Stir fry with vegetables.
This is a healthy meal for everyone even if you are trying to cut down on carbs. It’s protein and veggie rich. With a good amount of fiber.
It can be eaten alone or with a side dish like white Rice or Jollof Rice , fried plantains would go well with this and so will pasta.
If you are on a low carb diet, You will need to sub the rice with cauliflower rice or cabbage rice for a perfect low carb meal. This recipe has 336 calories per serving.
Is Beef stir fry and Vegetables Keto friendly?
This Beef stir fry is more low carb than keto. It can easily be made more Keto friendly by reducing the onions, skipping the cornstarch, skipping the carrots and halving the bell peppers.
What kind of beef do you use for stir fry.
Most tender beef cuts are good for stir fry. Sirloin, tenderloin, rib eye etc. Generally, any cut you can use as steak can be used for stir fry. If you’d rather have chicken, you should try this teriyaki chicken stir fry!
How to make stir fry meat tender / How to tenderize beef cuts for stir fry
If you happen upon a tough meat cut, you can tenderize with baking soda. I read that the addition of baking soda is one of the methods the Chinese use to get their meats so tender.
- Simply add 3/4 tsp of baking soda per 250g / about 1/2 lb beef cut, mix together and let sit for about 30 mins
- Rinse out after 30 mins, pat dry and use.
How to cut beef for stir fry
Beef should be cut against the grain. Look at the beef and see the direction of the fibers, cut against that direction more like a perpendicular cut. See picture below.
How to make Beef stir fry with frozen vegetables.
Frozen vegetables tend to have more water from melting ice. It is best to thaw the frozen vegetables completely before using.
Also frozen veggies can easily get soggy. Make sure to add it in after the meat is well cooked so it doesn’t get softer than it already is from being stir fried for too long.

Beef Stir fry and Vegetables
Ingredients
For Base Sauce:
- 1 packet McCormick® ONE Mix One Skillet Beef Stir Fry and Vegetables variety
- 1 Tbsp of corn starch
- ¼ cup of water
- ¼ cup low sodium soy sauce
- 1 tsp light brown sugar
- ½ Tbsp pepper flakes
For the Stir Fry:
- 1 lb beef cut up into small strips
- 3 Tbsp cooking oil of choice
- ¼ tsp salt
- 3 cloves of garlic crushed
- ½ Tbsp grated ginger
- 1 medium Medium onion chopped chopped
- 1 medium medium red bell pepper chopped chopped
- ½ medium medium green bell pepper chopped
- 3 medium carrots cut julienne style
- 1 cup of water
- 1 small Zucchini sliced
- 1 medium head ( about 2 cups ) broccoli blanched
Instructions
- Mix the base sauce contents together and set aside.
- Heat up skillet, add oil, begin to stir fry beef cuts.
- Add the garlic, ginger and onions to the beef. Continue to stir till onions looks translucent.
- Add the carrots, stir fry for about a minute to soften slightly.
- Add the chopped bell peppers and continue to stir fry for another minute.
- Add Salt then add the Zucchini slices. Water/ beef stock and base sauce.
- Stir in the blanched broccoli. Let sauce simmer for about a minute. Turn off heat.
I can’t find the seasoning packet. What can be used as a substitute?
Hi Kimby,
I am sorry you can’t find the McCormick stir fry seasoning. Yes You can make this recipe without it , replace it with any steak seasoning of your choice. (Preferably low sodium) so you can control the salt in the recipe. If you don’t find a low sodium option, Make sure to watch for salt as you seasoning. Hope that helps.
