Strawberry Chocolate Chip Cookies Recipe

These Strawberry Chocolate cookies also known as Pink velvet chocolate chip cookies, don't contain fresh strawberries but they sure taste like they do.

They taste just like my strawberry lemonade cookies mixed with some chocolate heaven but without the lemony tang.

How to make Strawberry Chocolate Chip Cookies!

These cookies are super easy to make as in literally... so don't panic. I used strawberry flavored gelatin to give it the strawberry taste then a few drops of pink food color to bump up the pink color a bit ( just for aesthetics)

You all know how I love colors. Therefore you can skip it if you don't mind a pale pink color. It will still be delicious.

This recipe requires melted butter, I love the soft and chewy homemade Chocolate Chip Cookies so I always start with melted butter.

  • Mix the melted butter with the strawberry flavored gelatin and sugar till fluffy.
  • Then add the vanilla extract, drops of pink food color, beaten egg and egg yolk. Mix in then add the flour and baking powder. Mix till well combined.
  • Finally add in ¾ cup of the chocolate chips . wrap and refrigerate for 2 hrs or overnight.

Did you know you can also make strawberry chocolate chip cookies with white chocolate chips? Yes you can.

Mix this Pink Velvet chocolate chip cookie dough and swap out the dark chocolate chips with white chocolate chips. Easy as pie!

Do you need to Chill the dough before baking?

Yes you do. This strawberry chocolate chip cookies recipe requires chilling. Recall we started this cookie recipe with melted butter.

We need to refrigerate/ chill the dough to prevent the cookie dough from spreading too much during baking and becoming too flat.

Chilling the dough does not only help with the melted butter it also helps to rest the dough giving the flavors enough time to develop.

Can this Pink Velvet cookie dough be frozen?

  • You can freeze your cookie dough. Read on and find out how.
    • After mixing the dough, instead of chilling in the refrigerator, scoop out by table spoonful and form dough balls.
    • Freeze the dough balls on the cookie sheet for 30mins. Then transfer frozen dough balls into a freezer bag and freeze for up to 3 months.
    • When you are ready to bake, you can bake them straight from the freezer. But you will need to bake for longer than 15 minutes. It will take about 18 to 20 mins.
    • Alternatively thaw the frozen dough balls overnight in the refrigerator then bake for 15 minutes.

    Ingredients
      

    • ¾ cup butter melted then allow to get to room temperature after melting in the microwave
    • 1 3 oz strawberry flavored gelatin
    • ¾ cup white granulated sugar
    • 1 egg beaten
    • 1 egg yolk
    • 1 teaspoon pure vanilla extract
    • 2 drops pink food color
    • 2-½ cups all purpose flour
    • ½ tablespoon corn starch
    • 1 teaspoon baking soda
    • ½ teaspoon of salt
    • 1 cup chocolate chips divided

    Instructions
     

    • Mix flour, cornstarch, salt and baking soda in a bowl and set aside.
    • Whisk butter, gelatin and white sugar together ( make sure the butter has got to room temp to avoid scrambling the eggs.
    • Add 2 drops of pink food color, the vanilla flavor, the egg and egg yolk, then whisk till well combined.
    • Mix in the dry ingredients till well combined ( do not over mix ).
    • Fold in ¾ cup of the milk or semi sweet chocolate chips.
    • Mold the dough into one ball and refrigerate for 2 hours or overnight
    • After 2 hours Preheat oven to 350 degrees F
    • Bring out refrigerated dough scoop by a heaping tablespoon full. Place 3 inches apart on a cookie sheet lined with either parchment paper or a silicon mat.
    • Press down Cookie dough lightly, stick on reserved chocolate chips on the top of the cookie.
    • Bake for 15 mins.
    • Bring out from oven, stick in some more chocolate chips while cookies are still hot.
    • Allow cookies cool on cookie sheet for about 8 mins then transfer to the cooking rack and let it cool completely.
