A funfetti cake is so pretty to look at and tastes so yummy. The first time I came across a funfetti cake I was so intrigued by it. I was wondering what it was made from and I felt like wow whoever baked this cake must a super star. Back then Sprinkles were not popular in the Nigerian market. Besides I didn’t know it was sprinkles and I didn’t know who the baker was and I didn’t know the internet either lol.

Fast forward to years later when I had started baking more. On one of my trips to the States I decided to give Cake mix a try just to know the feel and compare with my cakes which I always make from scratch. I think I picked the betty crocker confetti cake mix then. ( funfetti cakes are also called confetti cakes) I was curious to know what was inside. When I opened the cake mix i saw what had kept me curious all these years SPRINKLES.

Oh yeah. Sprinkles is the magic. You can make these as a loaf cake or as little pretty cup cakes. Which ever you decide. Be rest assured that everyone would love the splash of color in these pretty cakes. Confetti cakes are probably one of the first set of surprise inside cakes before bakers became more adventurous. They would definitely make everyone happy at your Easter dinner or any gathering that matters.

Most funfetti cake mixes I have seen are white cakes but these beauties can be made with any cake batter you want. Like my Nigerian style pound cake batter or my Christmas marble Bundt cake batter. Today I will be making it with my yoghurt cake recipe. No big deal just used some greek yoghurt in the batter and it made it super moist. Like I said you can use any cake batter you like since the show stopper here is the SPRINKLES.

A few tips to get you started on this funfetti cake

  1. Choose your sprinkles wisely. The tiny sprinkles don’t do so well with funfetti cakes because they can easily blend in and the colors wouldn’t be distinguishable anymore. My choice of sprinkles are usually the ones called jimmies
  2. Choose sprinkles with a pretty combination of colors so that it looks pretty when baked. I love rainbow colored sprinkles
  3. The sprinkles should be the last thing you add to the cake.
  4. When you add the sprinkles, do not mix in vigorously just fold in lightly and you are good to go.

Funfetti cakes must have been the first surprise inside cakes. Whether they were or not. This cake is not only easy to make but is pretty to behold and would surely delight your family and friends at any occasion.

Ingredients

  • 226g 2 sticks Salted butter
  • 200 g Sugar
  • 4 large Eggs
  • 6 Tablespoons Milk
  • ¼ cup Greek yoghurt
  • 220 Cup Flour
  • ¼ cup Rainbow sprinkles
  • 2 teaspoon Baking powder
  • 2 tsp Vanilla extract

Instructions

  • Prepare a loaf pan with baking spray or goop ( a mix of shortening and flour)
  • Preheat oven to 350ºF
  • With a hand mixer, beat sugar and butter till light and fluffy.
  • Add eggs, milk, yogurt and vanilla extract. Mixing after each addition.
  • Add the flour and baking powder to the batter, Mix until just combined. Do not over mix.
  • Finally fold in the sprinkles.
  • Spoon mixture into the prepared pan and bake in the oven for 50 - 55 mins or until toothpick or cake tester comes out clean.

The recipe does not say when to add the baking powder – I assume with the flour, but because it didn’t say I accidentally left it out when adding ingredients and had to pull the cake out of the over midbake to add it. Not fun, and ruined the sprinkle/funfetti effect mixing it into a hot batter.
