Pina Colada; a classic tropical cocktail made with rum, pineapple juice and coconut cream is definitely a summer time favorite.

I have always loved the tropical taste of pineapples but of course why not, I am a tropical girl. I am also in love with coconuts. When I first had a mix of both fruits was in a kind of juice box can’t quite remember the brand but it was a coconut and pineapple juice. That juice was my favorite until I left Nigerian lol.

So naturally when I found out about the drink pina colada I was interested. But one thing ☝? I have a light head for alcohol so I knew I won’t be enjoying the full benefits of pina colada because of that. That not withstanding, I went ahead and made the rum version for Mr K and the non alcoholic version for the kiddos and I.

I used my homemade honey pineapple juice and it was Ah- Maz- ing. Since Pina Colada is Puerto Rico’s National drink and June 10th 2028 is National Puerto Rican Day parade ?? so what better time to share this recipe than today in time for you to enjoy this tropical cocktail with your family and friends.

Don’t worry if you can’t handle booze like me, I have the perfect mix for you to enjoy along side your booze loving friends and family ?. So have I got your attention yet?? Let’s get mixing. Happy Puerto Rican National Day!!!

Pina Colada Cocktail

Pina Colada a classic tropical cocktail made with rum, pineapple juice and coconut cream.

Ingredients

  • 1 cup of ice
  • 1/4 cup of cream of coconut
  • 1/4 cup spiced rum or white rum
  • 3/4 cup pineapple juice

Instructions

  • Add all ingredients into the cup of a blender and blitz away
  • Serve immediately garnished with cherries
  • and pineapple wedges

Notes

TIPS
  • For a delicious non alcoholic version, swap the rum with 1/4 cup of heavy cream. It takes the the creaminess up a notch.
  • You can garnish with pineapple wedge. I because I ran out.
