Plantain Frittata is a delicious breakfast of baked plantain and eggs. It’s so easy to make yet so tasty twist to traditional fried plantain and eggs. This is one of our favorite lazy weekend breakfasts and also perfect for a nice Sunday morning. Get it into the oven while you prep for church.

What is Plantain Frittata?

Frittata is an egg based Italian dish similar to an omelette or crustless quiche which is usually enriched with additional ingredients like meats and vegetables.

Borrowed from the Italian dish described, Plantain Frittata is a Plantain and egg dish which is made by cooking fried plantains, eggs, veggies and meats together in a baking dish as a casserole in the oven or cooked slowly on the stove top.

Easy baked plantain frittata (baked Plantain and eggs)

This recipe is about to become your family’s favorite.

Ingredients and substitutions

  • Ripe but firm plantains
  • Eggs
  • Onions
  • Hot dogs
  • Bell peppers
  • Salt /Bouillon powder
  • Tomatoes
  • Pepper flakes
  • Garlic powder
  • Italian seasoning

How long to cook plantain Frittata?

It takes a 25 mins to cook plantain frittata in the oven and up to 30 mins on the stovetop.

How to make it plantain frittata

I’ll show you how to make plantain frittata in the oven or stovetop. Just like this loaded veggie omelet, it’s super easy to make!

Oven method

First wash and peel the plantains: here’s how to peel plantains. Cut off the tips of the plantains and make a skin deep slit in the middle from one tip to the other. Pull the skin back to reveal the plantain.

Cut plantains into slices, fry and set aside. Sauté onions, veggies and sausages, set aside to cool. Then preheat the oven to 350°F / 180°C

Lightly grease cast iron skillet, beat eggs, mix in the cooled sautéed veggies and sausages. Pour egg mix into the cast iron, top with fried Plantains. Bake in the preheated oven for 25 mins or until center is set.

Stovetop Method

  • Lightly grease a 10 inch frying pan ( preferably non stick )
  • Pour Mix into the frying pan or skillet
  • Cover frying pan with a lid, cook on medium low heat for 30 mins or until the center firms up.

How to store and reheat

Plantain frittata can be stored in the refrigerator for up to 3 days. Let it cool first the transfer to an airtight container and store. I do not recommend freezing this recipe.

To reheat: Place in a microwave safe bowl and reheat at 30 secs intervals until warmed through.

You can also reheat in the air fryer at 350°F / 180°C for 3 to 5 mins or until warmed through.

What kind of plantains can I use?

This recipe is best made with ripe plantains not over ripe plantains and definitely not green plantains.

Can you make plantain fritata Vegan?

You are in luck because there are now great vegan egg substitutes like Just egg that can be used to make vegan plantain fritata. I personally haven’t tried it for this recipe but used it for scrambled eggs.

I want smaller portions, can I use a muffin tin.

I don’t see why not. Remember to grease the muffin tins properly and bear in mind that the plantain egg muffins would likely cook in less time.

Can you bake the plantain slices instead of frying?

Definitely. All you need to is arrange chopped plantains in a a single layer on a baking sheet, spray some cooking spray and bake at 350°F/ 180°C till lightly golden about 15 – 20 mins.

Tips

  • I prefer to make sauté my onions, colored bell peppers meats before mixing in the eggs, that way the flavor is developed before baking.
  • Let the sautéed veggies cool before mixing it with the eggs otherwise the eggs will get scrambled from the heat.
  • You need just a little oil to sauté the veggies so that the frittata won’t be greasy.
  • Grease the skillet to ensure it eggs don’t stick to the pan.

Plantain Frittata (Baked plantain and egg recipe)

Ingredients

  • 3 ripe plantains
  • 1 small tomato (chopped)
  • ½ red bell pepper (chopped)
  • ½ green bell pepper (chopped)
  • 1 Tbsp of cooking oil
  • 1 medium onion (chopped)
  • ½ teaspoon garlic powder.
  • 8 Large eggs beaten
  • 3 hotdog franks (chopped)
  • 1 tsp crushed peppers flakes
  • ½ teaspoon Salt/bouillon powder (add more to taste)
  • ½ teaspoon Italian seasoning

Instructions

  • Peel the skin of the plantains, then cut into rounds about 1/4 inch thick.
  • Fry plantain till lightly golden brown and set aside
  • In sauce pan, heat a tablespoon of oil. Sauté onions, garlic till fragrant and translucent. Add the the chopped red and green peppers and stir fry for about 1 minute.
  • Season with with bouillon powder/salt. Then add the chopped sausages or hotdogs stir fry for another minute. Turn off heat and set aside to cool.

Oven Method:

  • Preheat the oven to 350 F, lightly grease the 10inch cast iron skillet or quiche dish.
  • Mix the cooled stir fry mix into the beaten eggs. Stir to combine.
  • Pour into the greased cast iron skillet.
  • Bake in the Lower rack of the oven for 25-30 mins or until center firms up.
  • Bring out from oven. Let cool for about 5 mins. Serve warm.

Stove Top Method:

  • Lightly grease a 10 inch frying pan ( preferably non stick )
  • Pour Mix into the frying pan or skillet
  • Cover frying pan with a lid, cook on medium low heat for 30 mins or until the center firms up.

Notes

 
  1. When cooking on the stove top, make sure heat is on medium low. 
  2. Start checking for doneness from 20 mins
