Where are my chocolate lovers? Here is another chocolate delight that you would totally love. These Easy chocolate cookies are one of my favorite chocolate fix.
I am not a fan of dark chocolate, I am a white chocolate girl ( I know white chocolate isn’t really chocolate but still… )
These chocolate cookies always make me smile lol. It’s crunchy, and bursting with chocolatey flavor. I am happy to say this is the best Chocolate cookie recipe I have true and You my friend will love it too.
Chocolate cookies are easy to make. You will need a good quality cocoa powder, some expresso powder and your butter flour and sugar.
Just that? O yeah.. just those ?. Are you excited yet? Just wait… Guess what? It’s made in one bowl. This cookie dough doesn’t need to chill in the fridge especially if you are in a hurry.
No chill time means You can start rolling, cutting out and baking as soon as possible .
If you are living in a warmer climate and you notice that these cookies lose shape while baking, a quick fix will be to a 30 minute chill after cutting out the shapes.
To be honest I bake these cookies without chilling because we always want the cookies ‘now’. Be sure to try out these chocolate covered cherry cookies next!
This cookie dough can be made ahead and stored in the refrigerator for up to 3 days and the freezer for up to a month.
Let the frozen dough thaw overnight in the refrigerator or on the kitchen counter for a few hours till it’s pliable.
Roll out on a floured surface, cut out with cookie cutter and bake.
How to store Chocolate Cookies
These cookies can be stored in an air tight container for up to a week. They never really last that long since they are gobbled up by some munchkins I know.
- Cocoa Powder for a darker chocolate cookie like the one in the post use this special dark cocoa powder
- Decaffeinated instant coffee
- Flour
- Sugar
- Vanilla extract
- Eggs

Easy Chocolate Cookies
Ingredients
- 1 Cup 2 sticks salted butter
- 1 ¼ Cup granulated white sugar
- 1 tsp vanilla extract
- 1 large egg
- 2 teaspoons baking powder
- 2 ½ cup all purpose flour
- ½ cup cocoa powder
- 1 teaspoon decaffeinated instant coffee
Instructions
- Mix the dry ingredients flour, baking powder cocoa powder, expresso powder (except sugar) and set aside
- Cream butter and sugar till light and fluffy
- Add the egg and vanilla extract, mix till combined.
- Combine the dry ingredients with the wet ingredients and mix till all is incorporated and dough comes together in a cohesive ball (Be careful not to over mix).
- Preheat oven to 350 F
- Roll out dough in between 2 parchment papers to about 1/4 in thick.
- Cut out to desired shapes with cookie cutters.
- Transfer cookie cut outs to a lined baking sheet
- Bake in the middle rack for 10 -12 mins.
- Bring out of the oven and let cool for 5 mins on cookie sheet then transfer to cooling rack to cool completely.
- Enjoy with milk
